Q. How do you ensure the quality and safety of your livestock?
“We ensure the quality and safety of our products by prioritising the health and welfare of our sheep. Our livestock are 100% paddock-raised and only travel 60km to a family-owned, accredited processing facility nearby, minimising stress during transit. By managing the transportation ourselves, we maintain complete control over their welfare throughout the journey. After processing, we collect the products in an accredited cold room vehicle and personally deliver them to our customers, ensuring they receive the freshest and highest quality products possible.”

Q. What inspired you to start growing Christmas trees in the South Burnett?
“We moved to the South Burnett 28yrs ago for the rich volcanic farming soil, as it reminded Chris of farms where he grew up. We started growing Christmas trees 18years ago. It started as a result of my 3 kids heading into high school, I wanted to stay on the farm and work, but have the flexibility to run the kids around with all their extra school/sport activities. After researching different crops, I came across Christmas trees, and being the lover of all things Christmas, decided to give it a go.”

Q. How did you pick Capers and was it always the plan?
“The possibilities and potential of the rich red volcanic soil stirred the ‘farmers’ from within. Both of us grew up on farms. So now, all these years later, when in search of a more peaceful lifestyle, we decided to move back to the land. The question of ‘what do we do’ with all this land loomed. (The farm was bigger than we were initially looking for, but the views are spectacular). We had been inspired by a story about Capers seen on ABC Landline, and we felt that they would fit our criteria, so why not give them a go. So that’s where it started.”

Q. What does a typical day at the property look like?
“A typical day on our farm is never the same twice. Irrigating fodder when needed, planting crops, animal health treatments if required, fencing, mulching grass to keep the protein up, fertilising and making hay are just some of the jobs to do. We grow a multi mix pasture blend consisting of up to 10 different species, including natural pasture and legumes. Using minimum tillage to disturb the soil as little as possible, we then mulch and fertiliser with organic fertilisers, hay is made from any excess feed.”

Q. What inspires your wine labels and what goes into creating them?
“Take three passionate people, a team of supporters, nine months of collaboration – and you may be somewhere close! The three key people in the Clovely collaboration were Susan Mercer, Clovely’s owner and managing director; Nicki Lloyd, owner of branding consultancy Lloyd Grey Design; and Claudia Husband, Brisbane artist and printmaker.
The other vital ingredient was the South Burnett region itself. Clovely Estate is proud of its South Burnett origin with its magnificent terroir, similar to the Hunter Valley. Early rebranding work had established that the labels should reflect the unique mood and motifs of the evocative regional landscape.”
